Chocolate and mint is probably my very favorite flavor combination, followed closely by chocolate and peanut butter. I often flavor my protein shakes with chocolate and a hint of mint — perfect for St. Patty’s day!
This simple protein-packed shake is delicious and healthy!
Mint Chocolate Chip Protein Shake
Ingredients:
1 cup cold milk (I use So Delicious coconut milk or unsweetened vanilla almond milk)
1 scoop vanilla Shakeology (or vanilla protein powder)
1/3 cup spinach leaves, stems removed
1/8 teaspoon peppermint extract
1 square 85% dark chocolate
Small handful ice cubes
Directions:
Combine milk and spinach leaves in blender. Process until smooth. Add Shakeology, peppermint extract, dark chocolate and ice. Blend until smooth and creamy.
Tip: Peppermint extract is strong. Start with 1/8 teaspoon (or a few drops if you don’t want to measure) and add a bit more if you’d like a stronger mint flavor.
Tip: Large chocolate chunks tend to sink to the bottom. The more you process the shake, the more likely the small chocolate pieces will be evenly distributed. No harm if the chocolate sinks to the bottom though, just use a spoon to scoop up all the deliciousness!
