I love eggnog. It’s one of my favorite indulgences around the holidays. But I don’t mean the icky store-bought stuff. I’m talking real, practically-take-all-day-to-make eggnog. Where you separate the eggs, and make a cooked custard, and beat heavy cream.
Where you mess up the whole kitchen and use about 25 bowls and whisks and spoons. You know, like your grandma might have made. Or like Alton Brown’s recipe here.
I might make that decadent recipe once a year, tops, but I do like to enjoy eggnog more than just once. And I love that it’s in keeping with my low carb, keto eating plan.
Two Keto Eggnog Recipes (one is dairy free)
Here are two, super simple, throw-everything-in-a-blender keto eggnog recipes. I won’t claim they will compete with grandma’s eggnog, because they don’t. They are not as thick, not as sweet, not as loaded with calories. But you can have a yummy treat in less than two minutes.
The first version uses heavy cream and the second is dairy-free, using full-fat coconut milk in a can. I am used to using coconut milk in my coffee so to me that version is only a little bit sweeter. I don’t taste coconut at all, but your mileage may vary.
On to the recipes….
- 1 egg
- ½ cup heavy cream
- ½ cup cold water
- 2 packets Truvia (or stevia or sweetener of your choice to taste)
- ½ tsp. vanilla extract
- ¼ tsp. nutmeg
- Throw all ingredients in a blender or Magic Bullet. Blend until smooth and creamy.
- Garnish with a sprinkle of nutmeg or cinnamon.
- Option 1: Top with real whipped cream.
- Option 2: Add in ½ scoop vanilla protein powder. Only use REALLY GOOD tasting protein powder (like this), or you will defeat the purpose of a delicious holiday treat!
And now for the dairy-free keto eggnog…
- 1 egg
- ¾ cup full-fat coconut milk (from a can)
- ¼ cup water
- 2 packets Truvia
- ½ tsp. vanilla extract
- ¼ tsp. nutmeg
- Throw all ingredients in a blender or Magic Bullet. Blend until smooth and creamy.
- Garnish with a sprinkle of nutmeg or cinnamon.
- Optional: Add in ½ scoop vanilla protein powder. Only use REALLY GOOD tasting protein powder (like this), or you will defeat the purpose of a delicious holiday treat!
