No Bake Chocolate Gingerbread Truffles
I still remember the first time I made truffles back in the day. Channeling my inner Martha Stewart in my cramped apartment kitchen, I carefully heated heavy cream and stirred in expensive chocolate. I rolled the gooey mixture into balls and placed them carefully on cookie sheets. The next step was simply to let the truffles chill in the refrigerator overnight. Simple, right? Unfortunately there was a slight incident between picking up the cookie sheet and opening the refrigerator door. Let’s just say my floor was impeccably clean and the 5 second rule definitely applied.
Don’t be clumsy and drop these Chocolate Gingerbread Truffles! Instead of heavy cream, you’ll use coconut cream combined with dates, cashew butter, molasses, chocolate and all sorts of yummy ingredients. Gluten-free and guilt-free.

Healthy No Bake Eggnog Bars
I have to admit, the photo of these No Bake Eggnog Bars was what attracted me first. Chewy bars covered with glistening sugar?? The only eggnog I’ve had so far this year has been a very disappointing low calorie almond milk eggnog. I’m totally ready to rock these yummy bars. They are gluten free and have a surprise ingredient - vanilla protein powder.
