The Quest bar pancakes use fresh blueberries and a Lemon Cream Pie Quest bar for a delicious, light flavor. The Lemon Cream Cheese filling pumps up the protein with vanilla protein powder and has fresh lemon zest for a flavor boost. The blueberry sauce is, well, pure berry deliciousness.

I have been making recipes with Quest bars for ages (it’s a slight obsession – please see my Quest Recipe Page), but I’ve discovered a new technique to take your Quest baking to the next level. I’m calling it “Quest Crumbs.” In order to achieve a light and fluffy baked good product, which can be difficult using the Quest bar in their normal state, I baked the bar first and then ground it into crumbs to use as a sort of protein powder/flour. I think you will be pleasantly surprised with the light texture of the pancakes.
Quest Bar Pancakes Recipe
1 tablespoon coconut flour
¼ teaspoon baking soda
¼ cup Greek yogurt, plain or vanilla
1 tablespoon milk (regular, almond or coconut)
¼ cup blueberries, fresh or frozen
Preheat oven to 350 degrees. Unwrap Quest bar and place on a cookie sheet. Bake for approximately 6 minutes until lightly golden. Allow to cool. When cool, grind baked Quest bar into crumbs using a blender or Magic Bullet.
In small bowl, stir together Quest bar crumbs, coconut flour, baking soda and salt. In separate bowl, beat egg until fluffy. Add yogurt and milk, mix well. Combine wet and dry ingredients.
Heat pan or griddle on medium heat. Spray with cooking spray or grease with butter or coconut oil. Pour pancake batter onto griddle. Cook until set on the bottom and bubbles appear on the top. Flip and cook on other side until set.
Note: You can drop the pancake batter by tablespoonfuls and make mini pancakes, make 2-3 medium pancakes, or make one large pancake.
Zesty Lemon Cream Cheese Filling
1 ounce cream cheese, softened
1 tablespoon vanilla protein powder
2 teaspoons sugar (or equivalent sugar substitute)
¼ cup Greek Yogurt, plain or vanilla
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
Place softened cream cheese, protein powder and sugar in a small bowl. Mix well to combine, mashing the cream cheese with your spoon to incorporate the dry ingredients. Stir in Greek yogurt, lemon juice and lemon zest. Serve immediately or store in fridge.
1 cup blueberries, fresh or frozen
2 tablespoons water
1 tablespoon sugar, honey or equivalent sweetness in sugar substitute
2 teaspoons fresh lemon juice
Combine all ingredients in a small saucepan over medium heat. Cook, stirring occasionally, for approximately 10 minutes until thick and syrupy. Serve immediately or store in fridge.
To serve as pictured, just stack blueberry pancakes with a scoop of Lemon Cream Cheese Filling in between each layer. Drizzle Blueberry Sauce over top and enjoy!
Make Ahead Tip:
Bake the Quest bar first. While it is baking and cooling, prepare the Lemon Cream Cheese Filling and store in the refrigerator. Then start on the Blueberry Sauce. (These three steps can be performed the day before you plan to make the pancakes.)
